Helen’s interview with Manuel – Part 2

H: Manuel, can you tell me what inspires you?
M: I’m inspired by the north side of the mountain of Reims, with which I try to be in harmony!
H: What is the best moment in your champagne making career so far?
M: My best moments are with friends when I rediscover bottles of champagne that I thought I no longer had! The last one was a Blanc de Noir 1985 Grand Cru, when we opened it, it filled the room with its bouquet. It was amazing. Also I am very proud of all the awards my champagnes have won over the years.
H: What is your worst moment so far?
M: I would say my biggest fear is oxidation.
H: What is your favourite champagne at the moment?
M: The grand cru we are about to release is pure delight.
H: Where will you be spending Christmas, and what will you be drinking?
M: I will be celebrating Christmas Day with my family in Verzenay, then we will go skiing in Flaine the day after. I will probably have the chance to drink some great white Burgundy and then I will know I’m truly on holiday!
