85% Xarel.lo & 15% Chardonnay
This grape juice for this cava was fermented in new French oak casks and then under went a second, bottle fermentation of 6 months.
The main function of the barrel fermentation is to obtain structured & elegant base wines with nuances of wood which harmonize in the palate and later on give a creamy texture and a wide range
of aromas.
The cask fermentation is evident in the flavours in the cava. There are lovely subtle scents of grape, lemon and apple with a hint of toastiness. The palate is creamy and full bodied with grapefruit and lemon skin and toast i the background. Fine delicate bubbles softly awake the senses! This is a wine with real character.
It's very good with risottos and compliments their richness, also give it a whirl with grilled lobster or smoked salmon
