A bit like an apple strudel in a glass. Dry but lots of baked apple fruit and a touch of biscuits and pastry.
This champagne has aromas and flavours of baked apples complimented by 'biscuity' and pastry notes too. It makes a lovely aperitif for those of you who like your champagne fruity but with a little toastiness too. Also try with roast pork and apple sarnies for a bit of decadence or canapés or poultry.
Thierry Forget assures us this Champagne is best enjoyed slightly warmer than normal - at 10 degrees centigrade.

The House of Forget-Chemin is situated in the Premier Cru village of Ludes in the Montagne de Reims. Thierry Forget is at the helm today carrying on the work started 3 generations ago. Not content with the experience and knowledge passed down to him, Thierry also obtained the wine making qualification Oenologue Diplômé in Reims in 1988. Today the family owns and tends 12 hectares of vines, some of which are just outside the back door of the house.
Thierry only produces 95,000 bottles of champagne a year and only 5% of that is exported, so it is a rare treat over here! Thierry has also elected to produce a champagne for the ‘Special Club’. In order to attain the ‘Special Club’ badge, the producer has to conform to many regulations and controls, but any champagne carrying this badge is a guarantee of it being amongst the best the region has to offer.
Thierry also works to the recommendations of the Viticulture Raisonnée which aims to promote sustainable agriculture in the Champagne region.
Technical Stuff!
This champagne is a traditional blend of all three champagne grapes- 33% each of Chardonnay, Pinot Noir and Pinot Meunier. This champagne undergoes malolactic fermentation and the dosage is 5g/l. Drink now until 2013.
